Cooking With Cowgirls

I was recently going through my EXTENSIVE cookbook collection when I ran across this gem. It brought back fond memories of a trip to Nevada, (okay…Las Vegas :), with my cousin Gerry. After an assault on the craps table and, a helicopter tour of the Grand Canyon, we met up with cousin Bill and headed for a lazy day at beautiful Red Rock Canyon.

Breathing Scenery

One of the things I love most about our country is the diverse scenery. Could these glorious mountain structures differ more from my home in the fresh pine-covered Laurel Highlands of Pennsylvania?  Or to the balmy palm-studded beaches of southern Florida? Or of the rocky coast of the Pacific Northwest, to name a few of our fabulous vistas?

And The Shopping…Of Course!

No sightseeing trip would be complete without a stop at the gift shop. I often choose a cookbook as a souvenir to remind me of my travel adventures. That explains my EXTENSIVE collection! I could not resist adding The Cowgirl’s Cookbook…Recipes for Your Home on the Range, by Jill Charlotte Stanford.

A “Must Share” Recipe From The Cowgirl’s Cookbook

Emergency Steak

1 pound hamburger

1 tablespoon minced onion

1/2 cup milk

Salt & pepper to taste

Dash of Worcestershire sauce

1/4 cup bread crumbs

1 6.5 can of mushroom stems & pieces

Smush all the ingredients – except mushrooms- together with your (washed) hands and place on a lightly greased frying pan. Pat the mixture into the shape of a T-bone steak, 1 inch thick. Cover with the mushrooms and broil until rare, medium rare, or well done.

Serves 4
